For those of you who’ve gone into hibernation….it’s snowing. Properly snowing. The snow on my road is so thick that you practically have to dig my car out.
My kids love snow. Their little faces when they saw the white stuff falling from the sky, was priceless. Their joy at being able to play with it – throw it, build with it, shovel it, is wonderful!
I hate snow. Hate hate hate hate hate hate hate snow!!
If you are 7 and your biggest concern for the day is what you are going to eat for lunch, then snow is magical & fun! If you are my age (around about 29ish) then the thought of snow is not fun. I hate driving in it, I hate walking in it, I hate the fact that plans have to be changed and that schools are closed. Did I mention I am not a fan of the snow?
So what do I do to get me through this trying time? Well cook of course!
Since the snow started on Friday, I have made:
Chicken Noodle Soup
Chicken & Aubergine Bake
Lamb Kawarma (fried spiced lamb with hummus)
Spinach & Chickpea Cakes
Beef & Lamb Meatballs
Spiced Chicken Drumsticks
Oregano, Coriander & Chilli Aubergines
Roasted Cauliflower with Red Wine Vinegar & Maple Syrup
Roasted Vegetable Couscous
Chocolate Orange Mousse
Self-saucing Lemon Pudding
And no, Mr P and I weren’t the only ones to eat all of this….some lovely friends braved the arctic conditions to come and have dinner with us last night!
So you see I’m coping with the weather by cooking AND eating…..when (if) this weather ever improves, I may well be one of those people that are so big you need to take the side of the house off and use a fork-lift truck to get them out!!!
Intact, talking of eating…twinkle number 2 came out of nursery last week with a sticker for ‘Good Eating’….it really made me chuckle!! I should get a sticker like that every day!! 🙂
So I’m off to cook some more! I’m back in Birmingham for the trade show, ‘Spring Fair‘ in a couple of weeks and I have a couple of big meetings this week, so I’ll keep you posted on all major ‘Bake With Suzy’ news!
